400 g CIRIO Passata Rustica
500 g veal
1/2 stick of celery
1 carrot
1/2 lemon
1/2 orange
50 g parsley
200 ml white wine
500 ml meat stock
Extra virgin olive oil
1 garlic glove
Flour for dusting the veal
Salt
Black pepper
Preparation
- Cut the veal meat into 5 slices, dust with flour and brown them in hot oil aromatised with the garlic.
- Remove the garlic and add the finely chopped vegetables. pour over the wine, let it evaporate and transfer to a pan.
- Add the passata, stock, salt and pepper to taste and cover with foil; bake at 180 degrees for 1 hour and 30 minutes.
- Cut the peel from the citrus fruit and finely chop together with the parsley.
- When serving, reduce the cooking sauce and serve sprinkled with the chopped citrus fruit.
