Light soup with tomato sauce marinated with mint

ingredients

400 g CIRIO Lenticchie
400 g CIRIO Piselli
2 ripe tomatoes
1 mint tuft

Olive oil
Salt
Pepper

Preparation
  1. Boil 1.5l of water with lentils and green peas.
  2. Meanwhile chop the tomatoes in half, remove the inside, chop into cubes and put them in a bowl with the chopped mint and 2 tablespoon of oil.
  3. Add salt and pepper to season.
  4. Serve the soup garnished with marinated tomato. Can be served cold in summer.
