Tagliatelle alla Rustica

320g Tagliatelle (Fresh or dry)

680g Cirio Passata Rustica Crushed Tomatoes 

350g Sliced Mushroom

200g Smoked Pancetta, in cubes

1 Small white onion, chopped

2-3 Table spoon Extra Virgin olive oil

Salt

Pepper

Parmesan Cheese  

Preparation
  1. Bring a large pan of salted water to a boil.
  2. Heat 1 tbsp of olive oil in a frying pan over medium heat.
  3. Add the onion and sauté until softened.
  4. Stir in the smoked pancetta cubes and cook for 2 minutes.
  5. Add the mushrooms. Cook, stirring occasionally, until the mushrooms have softened and loose their own water .
  6. Add the Cirio Passata Rustica Tomato Sauce to the pan, season with salt and pepper to taste and stir well. Simmer for about 20 minutes or until the sauce is well cooked and balanced, simmering longer if it tastes raw, cooking uncovered if too watery, or adding a little water or stock if it becomes too thick
  7. Cook the pasta according to the package instructions.
  8. Drain the tagliatelle and add it to the sauce.
  9. Toss everything together for 1 minute.
  10. Garnish with a generous sprinkle of Parmesan Cheese and enjoy!
