Halloumi with ratatouille by James Martin

ingredients

2 tbs olive oil

1 red onion, peeled and diced

1 red pepper, diced

2 garlic cloves, sliced

1 aubergine, cubed 1 cm

1 courgette, cubed 1 cm

400g Cirio chopped Tomatoes

 

1 small bunch of basil, torn

salt and pepper

2 x halloumi, sliced

1 tsp olive oil

 

 

 

 

Preparation

  1. Heat a large non-stick pan to a medium heat, add the oil then fry the onion for 1 minute add the courgettes and cook for 30 seconds then add the peppers and garlic and cook for another 30 seconds, finally add the aubergines, and tomatoes season and cook over a gentle heat for 5 minutes finish with the basil.
  2. To cook the Halloumi drizzle the oil into a non-stick frying pan when hot add the Halloumi cook for 1 minute until charred and flip over and cook for a further minute.
  3. To serve spoon the ratatouille into bowls and top with the halloumi slices season.
