Cirio Borlotti are shelled at source during the harvesting, then selected and graded using optical controls at the plants. Washed and blanched in hot water, they are canned and pasteurized using part of the cooking water and no other additives. The whole process is performed within 24 hours. Borlotti are the tastiest beans.
